Honey Oat Ginger Biscuits


These are simply delicous and super quick to whip up!
I make a double batch in about 15 minutes in my mixer and here is the recipe:

CREAM WET INGEDIENTS:
250 gm Butter cut into small cubes
2 Tbsp Milk (leave out if you weant less chewy and more
crisp like shortbread)
4 Tbsp Honey
1 Tbsp Grated Ginger
3 Tbsp. Coconut Sugar

MIX DRY and add to WET:
2 cup Flour (I use 1/2 Spelt and 1/2 Ground Almonds)
3 cups Oats
1 Tsp Cinnamon
2Tsp Baking Powder

Roll a spoonfull in your hand. Place on baking paper and press gently down with a fork.
BAKE 165 deg C for 13 minutes. (My oven was on fan bake)

OPTIONS:


Replace Ginger with 1 tsp Vanilla, or increase Cinnamon to 1.5 tsps or do both!

Add 1/2 Cup Cocoa and replacing 1/2 cup oats with 1/2 cup coconut.
